Recipe idea: the floating island INGREDIENTS : • 1 sachet of preparation for alsa® Isles Vanilla Crème Anglaise • 1 sachet of alsa® Vanilla Sugar • 50 cl of milk • 6 eggs • 100 g of sugar • 1 tablespoon of oil • 1 pinch of salt PREPARATION OF THE RECIPE : 1. Preheat your oven to 150°C (Th.5). Prepare the alsa® Crème Anglaise according to the instructions on the packet. Book cool. 2. Separate the white and the yolk of the 6 eggs. Whip the egg whites until stiff, adding a pinch of salt and a sachet of alsa® Vanilla Sugar. 3. Gently pour the egg whites into ramekins brushed with a little oil or silicone molds and bake in a bain-marie for 30 minutes, until the top begins to brown. Then gently unmold onto the cooled custard. 4. Chill the floating island until ready to serve. 5. Before serving, pour the sugar into a small saucepan and heat until you get a blond caramel. Pour it directly onto the floating islands, forming laces. alsa® tip: For quick cooking, you can put the egg whites in the microwave at 350 W for 1 min. And if necessary, put them back for 20 s in 20 s until the desired doneness is obtained.
